Sleeping
The 56 bedrooms and 12 Suites are each different in shape, interior
design and size, resulting in a variety of rates. The common thread
throughout all the rooms is the use of genuine Scottish Estate tweeds
as part of the interior design. Some 48 different highland Scottish
estates consented to allow us to use this very unique part of the Scottish
heritage. Every concievable last detail has been subtly considered.
Each room has been designed for comfort and convenience - from the discreet
privacy hatches, which prevent room service intrusions and luxurious
bathrooms to state of the art entertainment systems to handmade beds.
Accomodation comprises of: 12 Study Rooms, 32 Deluxe Rooms, 12 Editors
Rooms, 8 Publishers Suites, 2 Directors Suites, 1 Baron Suite and 1
Penthouse Suite .
The focal point of each room is the magnificent estate tweed curtains,
culled from 50 or so historic Scottish estates and produced by Johnstons
of Elgin. Leather belts are used as tie-backs and leather bootlacing
is used, with great originality, to bind edges and pelmets... Caledonia

North Bridge is the definitive brasserie in Edinburgh offering a fun
atmosphere, serious food and tremendous value.
There is the The Room 399 cocktail bar, named after the 399 malt whiskies
on offer.
Vermilion, a classic rich red, is both vibrant and timeless - encapsulating
all that is unique to the Scotsman Hotel is our in-house restaurant.
The fixed price menu is set at ?39 and uses the finest Scottish produce
from prime beef and venison to sensational seafood. Classic dishes include
dressed Skye crab and langoustines with pressed rosemary-roasted tomato,
peppers and sweet basil oil, loin of Ayrshire lamb with haggis in proscuitto,
smoked bean cassoulet and thyme pan juices, and tart tatin of pears
with bitter chocolate sorbet and Macallan soaked sultanas. Vermilion
has been created by Gregor Mathieson of Splendid, the specialists behind
some of Scotland's most successful restaurants including Andrew Fairlie
at Gleneagles. Mathieson's design incorporates 25 bronze fronted claret
cabinets which are offset by soft creams and browns that lend to the
air of sophistication for which the hotel has become renowned.
