Scotch Pancakes You don't need to wait until Shrove Tuesday to enjoy some old-fashioned Scottish baking. It's now something of a dying art, but Scots women used to make them habitually as part of their daily baking routine. Of course, you can now buy the ready-made variety, but there's nothing like the fresh taste of a warm pancake straight out of the pan and smothered in butter, home-made strawberry jam and cream - although they can be enjoyed with anything from chocolate spread to maple syrup (for an American variation). Often served with sandwiches during "afternoon tea" around 3pm, and hotels which still provide the good old Scots "high tea" (you get buttered toast, endless tea and a platter of cakes with your dinner) usually include them on a cake stand alongside scones, sponge, meringues, eclairs and all sorts of bad-for-the-figure delights.
